The Maccheroni family was born with a mission: to bring the people of Milan back to savour the true taste of authentic Italian home cooking. Together with our chef Pierandrea Leon, we created Maccheroni to bring back to the table the iconic recipes of our childhood, prepared with rigour, love and excellent ingredients.

You won’t find tourist trap dishes here, nor gourmet tastings dressed up as comfort food.

Maccheroni is the perfect balance between elegance and authenticity.

The ingredients of our carbonara

Carefully selected, just as a Roman grandmother would.

Because a great carbonara is born only from extraordinary ingredients.

Our recipe is not reinterpreted, lightened, “revisited” or modernised.

It is the authentic, Roman, rustic and perfect recipe passed down through generations.

Yet made even more special by a rigorous selection of Italy’s finest excellence.

🍝 RIGATONI

The pasta we use is made with Italian durum wheat, bronze-extruded and slowly dried at low temperature.

This guarantees:

- a perfect roughness to hold the sauce

- an unmistakable al dente texture

- an authentic wheat aroma, just like it used to be

🥚 EGG YOLKS – fresh every day

We use only egg yolks, from free-range hens fed on natural feed.

The yolks are rich, intense, golden, and give our carbonara that velvety creaminess that sets it apart from all others.

🧀 PECORINO ROMANO – Buccia Nera

Our pecorino comes from a single excellence dairy farm.

Salted to perfection, naturally aged, it has an ideal grainy texture and a persistent aroma, perfect for balancing the sweetness of the egg and the savouriness of the guanciale.

🧀 PARMIGIANO REGGIANO DOP – 24 months

We add it in small doses to round out the flavour, without ever overpowering the pecorino.

Aged for two years, it adds depth to the dish and a savoury note that completes the balance of flavours.

🥓 CURED GUANCIALE

Our guanciale is naturally cured, thickly sliced and pan-fried to perfection to achieve an irresistible crispy exterior and a soft, flavourful heart.

It represents the soul of our carbonara.

NO pancetta. No compromises.

🌑 BLACK PEPPER – Freshly ground to order

The final touch, but essential.

We grind it at the moment, directly onto the plate, to release all the essential oils of real pepper.

Not a simple seasoning, but a warm, vibrant and enveloping aromatic note.

NO CREAM 🥛. NO ONION 🧅. NO SHORTCUTS.
